To combine USA,  January, Beach and Backpacking you probably need to be in Southern California.
The Pacific Coast Trail runs along the coast. http://www.pcta.org/
You might find some chills and rain along with the sunshine.

South of Los Angeles are many short hikes

Hi guys,

For traveling I like to advice you to go to the Hawaii Island. The Big  Island of Hawaii is famous for fabulous fishing, secluded hide-away, rain forest, it's all here on the largest and most varied of the Hawaiian Islands. There’s no place on earth like Hawaii. Whether you’re a new visitor or returning , our six unique islands offer distinct experiences that will entice any people.

3 days is more than enough time to any tour, if you stay 3 weeks you will be bored out of your mind, and probably broke
