Making Umu, the Samoan oven

Everything from a whole pig to  breadfruit and bananas are cooked in the outdoor Umu.  A fire is made to warm some cocnut-sized rocks, which are laid in a  deoression and the food placed on them, then more rocks and banana leaves to cook and steam the food. breadfuit place there gets a little barbecue char on teh outside, but fish marinated in coconut cream and wrapped in banana leaves comes out moist and fragrant.

Don't forget some freshly picked mango and papaya and you have a real feast!

That big pig is good for feast! And you can also cook that to oven to make it crispy pig.
